Baked Apples

A Christmas favourite, these apples with butterscotch sauce are a delicious winter warmer.

Ingredients

  • 4 large Bramley apples
  • 110g butter
  • 110g dried cranberries
  • 110g Shamrock Walnuts
  • 4 tbsp cider or apple juice
  • 1 tsp ground cinnamon (optional)
  • 220g Shamrock Light Muscavado Sugar
  • 110g unsalted butter
  • 150ml double cream
  • ½ tsp vanilla extract

Method

  1. Preheat the oven to 200ºC/400ºF/Gas 6
  2. Cream 2/3 of the butter with the sugar until soft.
  3. Stir in the cranberries and walnuts.
  4. Peel and core the apples and place them in a greased ovenproof baking dish.
  5. Score round the middle of each apple with a sharp knife - this helps to prevent the apples from bursting during cooking.
  6. Spoon the mixture into the centre of each apple. Dot with the remaining butter and sprinkle with the cinnamon if using
  7. Pour the cider or apple juice over and around the apples.
  8. Cook for 15-20 minutes or until soft.
  9. Put all the ingredients into a pan over a low heat and stir until the butter has melted and the sugar has dissolved.
  10. Bring to the boil and boil the sauce for 3-4 minutes. As it boils the sauce will thicken.
  11. Remove the apples from the oven and serve with the sauce
